Structure, function, size, health, and the age of the wood you are pruning; these are factors that once must consider when pruning fruit trees.  Generally, dormant pruning is usually the best time to prune fuit trees.  
Don't overlook the beauty these trees display when only the branching is visible.

No other tree in the garden displays the season as well as a deciduous tree.  The rich and calming colors of fall, the bare and quiet branch structure of winter, and the optimism and beauty of the new growth in spring.
